We have a function before the wedding day and is called as curry chawara ( as the food should not contain onions and garlic). The menu goes like this curry, chawara (rice) aloo took, lotus stem subzi and sweets like. Sindhi Kadhi is very delicious and nutritious. This tangy Kadhi is made with roasted besan, (gram flour) and mix of Traditionally it is served with rice and also can be served as a soup.
Instructions to make Sindhi curry and Rice:
- Take a pan put 2 tbsps oil...wen it is hot put mustard seeds,hing, zeera,methidana & Besan then keep stirring...don’t leave the Besan otherwise it will get burned...When u see Besan is changing it’s colour then put some kadi patta ginger-chillies paste...keep stirring on low flame till it becomes little brown...In another pan take 5-6 cups of water and bring to boil..when Besan turns brown u must add chilli powder and boiling water immediately....keep stirring...Now u can boil the curry on high.
- Flame....when there’s one boil u can start putting the salt, vegetables...firstly shud put drumstick...then after sumtime gawar, chopped tomatoes...cover (half cover)the curry with lid on low flame...let it boil for 15-20 mins then u may add lady fingers..
- After adding all vegetables...u may boil the curry on low flame...approximately time to prepare Curry is 45 mins...When the Curry starts leaving the oil tht means the our delicious curry is made...In the end put the soaked imli’s water and coriander for garnishing...Ready to eat😋😋😋.
- Rice :1 cup Basmati rice soak for 1 hour.
- Take 4-5 cups of water in a pan and bring to boil...put 1 tspn. Salt and Rice...Remove the water when it is done...drizzle 1/2 tspn ghee Over it...it’s ready to eat..
